Drain a 400g tin of chopped tomatoes and add 6 finely chopped tomatoes, 1 finely chopped red onion, 1 finely chopped jalapeno pepper, 10g freshly chopped coriander, 1 crushed clove garlic, 30ml Sarson’s vinegar, 5ml lemon juice and a pinch of sea salt.
Mix together and serve as a dip or an accompaniment to meat.
